Ingredients

  • 3/4 cup buttermilk or milk soured with scant 1 Tbs vinegar 10min)
  • 1 egg, beaten
  • 1/4 cup Vegetable Oil
  • 3/4 tsp vanilla extract
  • 1 cup raw whole oats
  • 1 cup Flour
  • 1/2 cup brown sugar
  • 11/2 tsp baking powder
  • 1/4 tsp ground nutmeg
  • 1 cup frozen tart cherries, chopped (or canned cherries, drained)

Steps

1) Mix buttermilk, egg, oil, and almond extract in mixing bowl 2) Add oats, flour, sugar, baking powder and nutmeg 3) Quickly stir in cherries 4) (It is not necessary to thaw cherries) 5) Fill 12 muffin cups two-thirds full 6) Bake 15-20 minutes at 400F
