Ingredients

  • 1 med lg onion, sliced
  • 1 lg green pepper, diced
  • 1/2 cup Salt
  • 3 cups brown sugar
  • 1/2 tsp tumeric
  • 1/2 tsp cloves
  • 1/2 tsp coriander
  • 3 Tbs mustard seed
  • 1 Tbs celery seed
  • 6 cups cider vinegar

Steps

1) Mix zucchini, onions, green pepper, and salt 2) Cover and let stand for 3 hours 3) Mix remaining ingredients in pan, bring to a boil, and boil for 5 minutes 4) Drain the vegetables in a colander and rinse well with cold water 5) Pour hot syrup over them, and heat to just below the boiling point 6) Can in boiling water for 20 minutes
